Mango Bread
Ingredients:
2 cups all purpose flourÂ
2 teaspoons baking sodaÂ
2 teaspoons ground cinnamonÂ
3/4 cup macadamia nut oil
1/2 teaspoon kosher saltÂ
1 1/4 cups sugarÂ
1 teaspoon vanillaÂ
3 eggsÂ
2 cups diced mangoesÂ
1/4 cup chopped raw unsalted macadamia nutsÂ
1/2 cup shredded unsweetened coconutÂ
Instructions:
Preheat oven to 350°. Sift flour, salt, baking soda, and cinnamon together then add shredded coconut and sugar and make a well. Add in lightly beaten eggs, vanilla, Macadamia nut oil, chopped macadamia nuts and diced mangoes. Mix well to combine ingredients. Pour into greased loaf pans or lined muffin tins and bake on middle rack at 350° for up to an hour. Check with toothpick for doneness. Yields 2, 8 inch loaves or 2 dozen muffins or 6 mini loaves.
